Our Food Philosophy

Cava Greens was created to replace those old ‘salad bar’ standards. There are no carrots, broccoli, cauliflower, celery, or ranch dressing sold here. We wanted to create a place were the words fresh or gourmet are not needed - because they are the standard.

  • We don't believe in over-portioning.
    You decide what you want and how much.
  • We will never serve you processed foods.
    No additional sugars are added to any cooking process, just what comes natural.
  • All of our ingredients are served raw, blanched, grilled, or roasted.
    The ingredients can be pronounced by normal folks (well, maybe with the exception of ‘quinoa’ - but trust me, you want to eat this stuff).
  • Our vinaigrettes are made from 100% extra virgin olive oil and aged vinegars.
    We buy Alberquina olive oil from California that is first-pressed and unfiltered. Our vinegars are aged in oak barrels using the classical ‘Orleans’ process. The combination of these two high-quality ingredients makes our vinaigrettes truly unique. You won't find this anyplace else.
  • Our most popular flavor is the shallot mustard vinaigrette. If you are looking for something a bit sweeter in your salad, the molasses and sage vinaigrette accompanies the sweeter flavors quite nicely.
  • No Coke... No Pepsi.
    We've found that the sweetness and the caramels in soda detract from the flavors in your salad. We prefer locally made sugar-free sparkling fruit drinks, ginseng tea, water, local beers and tasty wines.
