How It All Started

After traveling around America, I've found that restaurants are basically all the same. It does not matter what category they are in - from hamburger joints to home-cookin' establishments to ethnic food - all restaurants have virtually the same offerings. Most of their menus rely on processed foods and therefore lack uniqueness of flavor, visual appeal, and creativity.

During my journey, it also became apparent that there was no salad restaurant serving truly fresh foods. Yes, the tomatoes are fresh; however the beans usually come from a can packed with shelf stabilizers. How about the peas? Probably frozen at one time. Have you ever read the labels of a mass-produced dressing or vinaigrette? What is "POLYSORBATE 60" or my all-time favorite "CALCUMDISODIUMEDTA?" Do people really eat this stuff? Indeed…people eat this everyday.

So, the idea of Cava Greens was born. It all came together in the middle of another business trip. Standing in the airport, hungry and craving nourishment, I was faced with all the same old options and knew I couldn't stomach another airport meal. I knew there had to be a better way to eat.

We invite you to enjoy a truly unique experience. Cava Greens is designed for people that are looking for something different. Although the abundance of choices may be overwhelming at first, it really is quite simple.

Meet Chef/Owner Patrick Fox

I've been in the restaurant industry for over 25 years. I grew up in the kitchens of Dallas where I gained a wide range of experience and an appreciation of great food. My background venues include country club dining, fine dining, and a unique opportunity as a personal chef on a family yacht.
